Solid post. I've been thinking about the same thing lately. My HK VP9 has been my go-to but I'm always looking at other options.

Quarter acre is awesome! I'm working with containers and a small backyard but still managing to put away quite a bit. Beans and squash have been my best producers for the storage space. For canning equipment, hit up estate sales and thrift stores - found my pressure canner for $15 at a garage sale. Also look into dehydrating if you haven't already, way easier than canning for some stuff and the equipment is cheaper.
Been doing this for about 5 years now with the family. You're right, it's way harder than YouTube makes it look lol. First couple years we lost more tomatoes to blight and bugs than we actually ate. Canning is a whole other skill - get a good pressure canner and follow tested recipes exactly. I've got about half our yearly vegetables covered now but it took time to dial in what actually grows well here. Keep at it!
